She's best known for her work in films like "100 Tula Para Kay Stella", "Meet Me In St. Gallen", "The Day After Valentines", her work "Yung Libro sa Napanood Ko" and so many more.

This new collaboration with Aera is called Lights, Camera, Cosmos; also under the same people who brought you iWhite Korea products which has been trusted in the Philippine market for over 20 years. INASAL REPUBLIC Opens West Avenue Branch On July 15th

Chicken Inasal by Inasal Republic - The meat is soft, evenly cooked, has a crispy skin outside. The garlic rice can be smothered by the good Chicken Oil set on the table. I had a separate dish with Soy Sauce and Sinamak, a spiced vinegar. They have master grillers prepare this for us!

If you're a frequent local traveler, you probably have landed somewhere in Negros Occidental and visited Bacolod City. Much of its charm lies in its people, on how they talk so "malambing" (so soft even when they're mad) and party hard during festivals. I too am from this region, so I'm no stranger to food coming from this place and when I heard Cong. Arjo Atayde, Direk Richard Somes, Gabby Atayde, Ivan Villamar and Mark San Diego were putting up a Chicken Inasal brand called INASAL REPUBLIC, I packed my bags and camped out to see it in Quezon City.

Congressman Arjo Atayde personally served us that afternoon, he was so nice!

Although for some of them, this isn't their first venture into the food business, the partnership blossomed over the last taping day of action film TOPAKK. Arjo was already full from the food served during dinner, but after a while, Chicken Inasal was served on the table and got everyone started raving about it. Direk Richard said Arjo shouldn't leave the table without tasting it, and so he did! 

The Chicken Inasal and other food served that day came from Direk Richard's family recipes, it was passed on from generations of Bacolodnons who loved to eat and cook. Here's a short video of the event, I also included some clips of the food and celebrities that came that afternoon!

 


Here's some of the food items that's going to be served at Inasal Republic, let me share a few that you'll surely enjoy!

Kansi Soup, comforting and fruity, not too sour which I like! (We were served half the serving because we will be having a lot of food that afternoon!)

Bangus Inasal - I liked how light and soft it was, the very savory sauce complemented it. It was nicely paired with Garlic Rice

Pusit Inasal, for those who love seafood, this would be a dream!

The desserts, Biko, Alupe (in Banana Leaf) and Maja Blanca. I love the Maja Blanca the most as it's so soft, sweet and a little salty on top because of the cheese. The Alupe was new for me, but reminds me of Pangasinan's Tupig, but was actually steamed. Go get them both!

If you're excited as I am about what's about to happen, it'll all go down on July 15th as they open up shop at 25 West Avenue in Quezon City. They also have other items on the menu like the Chicken Inasal Flakes (also in bottles) and Laing that people were loving that afternoon. You can also choose to mix them up with the Garlic Rice, it's as good as it looks in photos. I will probably have to line up that day just to get a taste of it again. Cooking with Truffle Is NOT Complicated

I'm a Truffle buff and I'm not afraid to cook with it. I'm also the first one in line to have dishes with it, because for the fun part, I'm crazy obsessed with it. 

Cooking for it must be a mystery for most people, but let me tell you a simple rule. If you are cooking with truffle, use the black variety. If you are using it for a salad or finishing something like soups or dishes, use the white kind because it doesn't need heat for the flavor to permeate. With that in mind, the good people over at UMBRIA are suggesting two new dishes which you can serve your family and friends. Let's introduce these two recipes and get straight to business.

 Beef Mushroom Sandwich

Ingredients: 30 grams Sukiyaki Cut Beef, 50 grams Portabella Mushrooms, a table spoon of soy sauce, Mayonnaise, a good crusty bread, Umbria Truffle Oil and Worcestershire Sauce.

Marinate the beef with soy and Worcestershire sauce (overnight if possible) but 30 mins would do. Cook it with butter, mushrooms, season with salt and black pepper. Put mayo on bread, when beef caramelizes, add mushrooms. Salt to taste, then finish the beef with a little Umbria Truffle oil after placing it on top of bread. Remember, a little goes a long way.

 Potato Leek Soup with Truffle

Ingredients: 3 Medium sized potatoes, 35 grams of leeks, 750ml chicken or vegetable stock, 125 ml of Cream, White Pepper, Umbria Truffle Oil

Peel potatoes and cut into slices, chop up leeks and saute on hot pan with butter. When leeks become wilted, add potatoes, stir it in til it crumbles. Add broth, salt and pepper to taste. Put it into a blender or use an immersion blender if you have one. Add in cream, mix thoroughly (not to boil so it gets creamy). Put a few fresh leeks on top, crunchy bacon (if you have it) and about a half teaspoon of Umbria Truffle Oil. Put this on the side of the sandwich we prepared earlier, and it's a meal you'll love for sure!

Make sure you enjoy your time at home and prepare food for them, your family and friends will surely love it because the one who prepared it is YOU. Truffle is NOT complicated, think of it as perfume when you're about to go out on a date, but you're just putting it on a plate. TRUFFLE Dreams Come True in Manila

I am a certified Truffle addict, let's just put it out there.

My fascination with it spanned years when I first learned about it on YouTube and how it was like legendary status in Italy. It was like gold, only found by special hunting dogs, pigs in secret farms across the country. It has no certain place to grow, very difficult to actually find which made me even more eager to actually taste it. I also learned more about it when hotels in the Philippines started sourcing it for most of their pasta dishes via their upscale restaurants. It opened a huge opportunity for local chefs to experiment and use the certain flavor to enhance dishes, Italian or not, and get it to that heavenly place called Tartufo bliss which everyone wants to attain. I still do.

Anyway, I always wanted to cook a batch of fresh pasta, with chicken, bacon and mushroom cream sauce. I knew it was a little hard to source truffle in Manila so I never really sought doing it because the last time I got some, it cost me an arm and a leg. I didn't really complain because I know how hard people have worked just to get them. I didn't know where to find them in abundance, but this one came to life. Yes, there exists a truffle brand called Umbria Terra di Tartufi. This actually is now easy to source as it is available in the country courtesy of the people of DyGen Food Ventures Inc., the same people behind Dyna Drug Corporation that brings in really good products into the country. 


Their Truffle Sauce or what they refer to as Salsa Tartufata was so good I had to cook a batch when it arrived on my doorstep. This thing had bits of fresh champignon mushrooms, EVOO, olives, truffle, salt. In what is supposed to be such a difficult task of spending hours in the kitchen only took minutes for me to do. A spoonful would be enough to actually flavor up a meal for around 4 or more. A hint of it would actually go a long way and when things are hot, I could finish a bowl or two in one sitting (oh please don't judge). The white truffle oil on the other hand, is what I want to use for steak soon. It's quite nice to have it also finish a lot of dishes like bruschetta (when you bite on toast and close your eyes lol), pasta (which I love with bacon and more bacon), meat (oh those steaks) or fish (Steamed or pan fried, all good). I think I loved how the cream also enveloped the pasta and still smell that truffle permeating on several forkful of it. Ahh it was so good!

 As if that's not enough, they've got other things that would be good for the panty for people like me.

They also have sugar free options for diabetics like me. I love shortbread cookies with tea in the afternoon. They also have chocolate wafer and the twins cocoa sandwich cookies. That's for my midnight snack LOL.

Minola and the Ketogenic Diet

Last year, we had a good discussion with Dr. Fabian Dayrit about the good and the bad things about the Ketogenic diet. He says “Harvard Medical School published articles about it and asks if it is good for you to actually do it. There is a difference between Ketogenic, low carb, IF and Atkins diet. Traditionally it was used to treat childhood epilepsy, it was an effective treatment under a physician’s care. That was 1920, so this resurgence in the last 15 years is really nothing new. Fasting gets the accumulation of Ketones going. Atkins diet which was done more during the 80’s, it is mostly no sugar, high protein commercial diet and is done in phases. “


Also, he said “Ketogenic diets have high fat low carb, 20% protein. There is also mct keto and vco ketogenic diet and done in several styles. Fasting produces acetone and before, they used corn oil for treatment of epileptic children. In the 90’s diet induced hyperketonemia was done for sugar problems and lifestyle diabetes. If you don’t have glucose, your body goes to find other sources of energy and this is where ketosis starts.”




He adds “Ketones improves mitochondrial condition. It is the main source of energy for cells (including your major organs). If you are using statins, don’t do Ketogenic diets because it will just block it from happening. Right now there are clinical trials done against certain types of cancers. Lauric Acid during glucose starvation may reprogram energy metabolism and proliferation of cancer cells. (lauric acid is in coconut oil which Minola is) They also have studies about it versus Alzheimers disease where Dr. Mary Newport subjected her husband to. Her testimonial indicated that it also made good progress using Ketone Ester which mitigated her husband’s Alzheimer’s Disease. Ketosis is done through fasting, strenuous exercise, Atkins diet, coconut oil, MCT’s, ketone ester or a combination of these. Coconut oil has a unique fatty acid composition and no other oil is like it. VCO, Minola or straight eating coconut meat would make you get lauric acid. Published studies also say that Coconut Oil also has antimicrobial activity.”

She lost her baby because she apparently had high sugar levels and did not take it lightly. She dedicated the name of her baby to this business and now produced cakes, pastries and food that are all keto friendly. She also now use coconut oil for all her cooking needs. When I left, I felt the sincere and eager participants want to change their lifestyle especially after the throng of women who changed their lives doing keto. With the aid of right know how and keto approved products such as Minola, it will be an easy journey for anyone who would want to live healthy lives. Let’s Talk About KETO

My weightloss journey isn’t much of a yoyo but more of, a roller coaster ride. The first time I’ve heard of Keto, I became just like most of you, a skeptic and my questions pretty much set me into a journey of asking MORE about my health. Being overweight while working was a chore, it wasn’t fun being bullied and made fun of because of your weight and in all fairness I have tried a ton of diet programs I could keep my hand on through google. You become more depressed, a lot cranky, and fail in the end. In a way I was forced to be in this place because doing keto did fit my lifestyle. It was more about the food I eat, the type when it’s keto friendly or not. There are reputable websites that identify them, backed by research and even more studies so reading more about it was required. I tried it for a few months and just on the second month I was getting complements left and right that I lost weight. 


I personally felt easier, lighter, lost bulging in my gut, even the dreaded double chin. I deemed I’m a big guy and felt that I have an ideal weight. I’m near that goal and I don’t think I’m depriving myself at all. It is hard especially when you are just starting and trying to reach the state of ketosis. It took me a while but when I felt that I got there, that’s where I think the results came. I lost a size off of my waistline, even a size off my shirt. I don’t have washboard abs and I don’t work out, but I’m completely fine now. I’m quite happy with my sugar and blood levels, and at this state completely at ease while I’m still adapting to the things I eat. It’s totally different from the normal things Filipinos eat, and the biggest sacrifice for some are spelled R I C E, one that I’ve completely taken out of my meals. I think I’m on the right track.


Aside from that, I’ve grown the affinity to like certain vegetables, no root crops, fat and protein. I have also learned to cook legibly, use my skills in the kitchen and do make ahead meals. If I can’t do much of that, I eat what’s available and just choose the things that are keto friendly. Dr. Fabian Dayrit, an Atenean Professor and VP for National Academy of Science and Technology and Chair of the Scientific Advisory Committee for Health, Asia and Pacific Coconut Community says "You have to always check your sources, you also have to take note of your dates when you're researching about the Ketogenic diet. It was once used for the treatment of epilepsy, also similar to the Atkins diet which is a commercial diet plan with phases which focused on low carb and doesn't distinguish the type of fat, that's the main difference. Ketone Bodies are result of fats (MCT's) that go through the liver and produce this. There are levels of ketosis, nutritional ketosis, therapeutic ketosis and Ketoacidosis (not a good state that happens with diabetics). Inducing ketosis can be done by FASTING, EXCERCISE, ATKINS DIET, KETONE ESTER, and INGESTION OF MCT's or COCONUT OIL or a combination of these.


In the end of their talk, I knew I still had to learn lot about how to make these all part of my lifestyle. I have seen success stories and I’ll tell you about it very soon. One of which includes Mae Paner aka Juana Change, one who completely turned her life around from being morbidly obese. As for me, I’m going to continue my Keto lifestyle. I suggest you talk to you doctor about it and ask for opinions from experts too. I don’t see this as a fad, but more of hope for those who may fit the glove. Some Good Things About Canola Oil

What kind of oil are you using in your kitchen? Is it still palm? Vegetable? Coconut oil? Not that I'm saying it's not good but for me, it's been a good experience cooking with Canola oil. It's got a lot of fatty acids that is essential in your diet, some of which are can't be made by your own body.

Canola actually contains Alpha-linolenic acid (ALA). It is an omega-3 fatty acid which protects you against heart disease by lowering bad cholesterol. It also contains Linoleic acids which is an omega-6 fatty acid, your body can't produce that naturally but this one has it. Aside from that, it helps you in nutritional gaps because it contains phytosterol. There are a lot of things that Canola Oil has to reduce the risk of coronary heart disease.



Canola Oil doesn't also hamper in the taste of your food, whether Chicken, Beef or Pork, it retains it's neutral taste and it doesn't smell too even in high temperatures. It can do well in frying, sauteing or even baking. A tea spoon of it everyday would reduce the risk of heart attacks, so if you're a health freak, this would do so good on your diet. Remember, cutting down on saturated fats helps cut your cholesterol levels so if you're out and doing grocery, pick up something good on the shelf like Golden Fiesta.

Change the Mood in Your Home with Favori Scents

I'm such a late bloomer. I just realized how much a drop of fragrance could immediately make your day extraordinary. Case in point, are these life changing Aerator/Diffuser Oil from Favori Scents. I was a little stressed this week. From covering events, a new harder work out routine, less carbs, no rice, the whole enchilada! The little refuge I need didn't have to cost an arm and a leg because - it's just my bed room. Now I won't let you see my cave for obvious reasons, but I just wanted to try this out. So I took it out of the box and saw these cute little blue bottles from Favori Scents. It was a little mysterious as I didn't know what scents were in the pouch, but when I took it out, I loved what I saw!

The bottle of scents came with a small label. It indicated that it is water soluble. It only means that the thing can actually be dissolved in water. It also says that it can kill odor causing bacteria in the air and is best used in an air conditioned environment, which totally fits the thing that I'm doing today.

At the back of the same label, they encourage you to actually return the empty Favori Scent bottles. They also will give you discounts on your next purchase, that's so nice of them no? So for 4 days I tried them all! Here's what I found out.


Lemon Grass - This is one scent that I usually only appreciate while inside the kitchen. I have it in drinks or chicken most of the time, but it's actually quite good to use here too. Lemongrass oils have been used in perfumery for ages, you just didn't know because they keep it a secret. It is said to be good to make you relax, lessen anxiety, take care of insomnia and drowsiness. Having one thing to do all that is phenomenal and before I used it on the first day, I was sleeping 2-4 hours a day (no joke). I used this and it was quite relaxing, so I slept with the keyboard in my face (around 9PM) and woke up 8AM the next day. Undeniably, it helped and I was gearing to use it everyday after that. I had a better plan though so I used the other Favori Scents instead!



Winter Mint was a little surprising. I love the cold temperature in my room, but this just takes it to a whole different level. I could feel it a little sting, the good type, like I'm breathing fresh eucalyptus infused air, like I'm in a forest. Although I haven't even stepped out of my room in that instance. I dreamed I was a vampire that evening running through the forest... like Twilight, without the glitters, but that acres upon acres of white snow. It felt so fresh, a little minty, and you could feel it when you enter the room. It's there and it will calm you down whatever happened throughout the day. 


Fresh Fruity Mango with notes of sweeter citrus on top, that's what Mango Mandarin smells like. A few drops would actually perk you up, like a bowl of sunshine in the morning. I bet this would be actually better used at daytime because it's fresh and sweet. It's like spring time! Like a whole basket full of mandarin oranges were put in a bowl with cold ice and placed right at your bed side table. Amazing!

Sunkissed Citrus on the other hand presents a sweeter but tangy smell in the air. It's a little more on the citrus side, still sweet but you get the impression of orange slices and a whole fruit platter inside your room. Again, this changes your mood from relaxed to perky. This would really work when you're off to work or just have a few friends over while having tea time or anything in that line. I loved this the most!



I also super love the diffuser that I got from them. It's light, it's got the graduated marks on the side to see if it's already on the minimum or maximum level. Make sure you don't fill it up to the brim because again, this gets your air in a centripetal manner. If it spins around and you have the water up there, it'll probably spill. Aside from that, make sure you only use a few drops of the Favori Scents fragrance oils because its intensity actually depends on how many you put in. I only put in around 5 and it'll last throughout the day when the liquid gets to the minimum level. Putting in the Favori Scents on it could last you a couple of weeks and you don't really need that much if you're just putting it in your room or common areas.

In small ceremonies at the Dusit Thani Hotel in Makati City, Chevron re-launches some of their celebrated product brands Havoline. They're in new product labels and pretty slick look. They're also going full force with Havoline ProDS Fully Synthetic ECO 5 SAE 5W-30, the Havoline Synthetic Blend SAE 5W-30 and the Havoline Super 4T Synthetic Blend SAE 10W-40. All of which are now going to be available in selected Caltex Stations, supply stores and shops nationwide.
